Alain Passard, French chef of L'Arpege in Paris topped the list followed by Andreas Caminada of Andrea Caminada in Furstenau, Switzerland and Faviken of Magnus Nilsson. Surprisingly, the list does not include any European restaurants from the Top 100+ Classical & Heritage Restaurants which was released earlier this year. In fourth place was Eneko Atxa's Azurmendi while De Librije, Jonnie Boer's restaurant in Zwolle, the Netherlands placed 5th. The OAD list claims to be the only restaurant ranking system that determines the experience level of the people contributing reviews to the site. Bilbao to host World’s 50 Best restaurants awards next year
Bilbao, in the Basque region of Spain, will host the 2018 World's 50 Best restaurants award. The World's 50 Best Restaurants announced it will be working in partnership with the Government of Biscay to bring its event to a region of Spain that is known for its outstanding food. The 2018 will mark a return to Europe after the successful editions in Australia earlier this year and in New York in 2016. The move to Spain forms part of the World’s 50 Best Restaurants’ global tour, which it kicked off in 2016 following 13 years of the awards being held in the UK. Alain Passard is Chef’s choice for the list of top 100 chefs 2017
French chef Alain Passard was voted as the chef of the year by his peers in a list of 100 top chefs published by the magazine Le Chef. The list, in its third edition, was compiled taking into account the opinion of 534 chefs that have 2 or 3 stars around the world who had to answer the following question. "Who are the five international chefs that represent the values of the profession, have a unique cuisine and is worth visiting?" The first choices the previous year were Pierre Gagnaire and Michel Bras. This year, its the chef of L'Arpege, Alain Passard who is top of the list. There are only two women in the list, Anne Sofie Pic and Nadia Santini. Chefs focus on vegetables and sustainability on first day of Chefs Revolution in Zwolle
Vegetables took the centre stage on the first day of the third edition of Chefs Revolution, an event organised by Therese and Jonnie Boer of De Librije Restaurant in the Netherlands and the team at Port Culinaire in Zwolle. Jonnie Boer, Magnus Ek, Eneko Atxa and Mauro Colagreco delivered splendid presentations on their approach to cooking at the Spiegel Theatre in this beautiful Dutch city. On a sunny day, over 1,500 turned up to Chef's Revolution to listen to what these chefs had to say about the state of gastronomy today and also see them present their cuisine during live cooking presentations. Jonnie Boer, Magnus Ek and Mauro Colagreco put the spotlight on vegetables and they all seemed to be in agreement that in future people will have to eat less protein if we are to ensure a sustainable future. Third edition of Chefs Revolution, the Dutch Avant Garde Cuisine Festival to be held in September
The third edition of Chefs Revolution, the Dutch Avant Garde cuisine festival will take place in Zwolle, the Netherlands on 18 and 19 September. The event is organised by Jonnie and Thérèse Boer of three Michelin star De Librije in cooperation with the team Port Culinaire Thomas and Carola Ruhl. The first chefs that will participate in this third edition have already been announced. These are two Michelin star chef Magnus Ek from Oaxen Krug in Stockholm, Sweden, two Michelin star chef Tanja Grandits from Stucki, Switzerland who was also Gault Millau chef of the year for 2014. Virgilio Martinez, chef of Central in Lima, Peru will be travelling to the Netherlands to present his cuisine. Alain Passard is Opinionated about Dining’s top European choice for 2016
Alain Passard’s restaurant L’Arpege has been voted the number one restaurant in the newly released top 100 plus European restaurants 2016 list released by Opinionated about Dining on 23 May 2016. The chef who mentored some of the top chefs in the world including Pascal Barbot, Magnus Nilsson and Mauro Colagreco, is known for fostering the vegetable-oriented minimalist cuisine movement. Eneko Atxa, chef of Azurmendi, who was number 1 on the list last year placed second followed by Belgian chef Kobe Desramaults (the latest chef to be interviewed by Food and Wine Gazette here) who placed third. Fourth was Magnus Nilsson with his restaurant Faviken and fifth came Noma’s Rene Redzepi. Four Belgians are in the top 50 positions of the list. A contemporary take on Maltese cuisine at Michael’s in Valletta
Maltese chef Michael Cauchi needs no introduction in Malta. Famous for his former restaurant Il Re Del Pesce, today the chef works together with his son Daniel at Michael's in Valletta. When I was younger (and still living in Malta), the chef was a household name on this small Mediterranean island. He used to be on television showcasing his fish dishes, for which he was renowned even at a time when food was not as in vogue as it is today. Since that time, he has worked in various kitchens on the island but none more important than Aziamendi's 100 day pop-up restaurant two summers ago. Michael and his son Daniel were involved with Eneko Atxa and his team who set up the pop-up restaurant in a historic building in Valletta known as L’Hostel De Verdelin, after Fra Jean Jacques De Verdelin, a nephew of Grandmaster De Verdalle. A year ago today, we launched Food and Wine Gazette without knowing exactly which direction the website would take. Time flies and in many ways it seems like yesterday. That might be the case because it has been a crazy year. On top of a full-time job, we've been trying to build Food and Wine Gazette into what it is today and that path has gone way beyond our expectations. When I started this website, it was a way to introduce a bit of creativity into my life which was completely missing and combine two things I am extremely passionate about, writing and food and wine. Today, a year later, I am extremely pleased with the results achieved and have more experience and a better understanding of what Food and Wine Gazette has become and how best to enhance it and make it more useful. We have written many times about the subject of food waste but there is nothing more shocking than photos to show the extent of the problem. Rob Greenfield writes in civileats.com about what he calls America's food waste fiasco. He says that every year, Americans throw away $165 billion dollars worth of food. He has been hosting food waste fiascos in major cities in an effort to raise awareness about the grand scale of the food waste problem. The photos of waste he has rescued from rubbish bins are shocking to say the least. This morning we followed a very interesting debate about anonymity of restaurant critics on Twitter.
