A visit to the new Rotterdam food market

Rotterdam had not been on our radar screen despite the fact that we had heard great things about the city. But when we read and wrote about the new Rotterdam food market opened in October last year we knew that a visit was a must. This Dutch city is often overlooked as visitors head to Amsterdam, the Hague and Delft instead. That may be set to change in future with the food market that could become a destination for foodies around the world. We will feature the city in our Perfect day series so do stay tuned but in the meantime here are our observations about the food market. For lovers of architecture, Rotterdam has a lot going for it. The recently opened food market, designed by architects MVRDV is the latest architectural gem to emerge in this city. De Librije opens its doors in new location in Zwolle

De Librije, the three Michelin starred restaurant of Jonnie and Therese Boer in Zwolle, has opened the doors in its new location within the Librije's hotel today, 20 January 2015. Jonnie and Therese Boer told Food and Wine Gazette that after more than 28 years, in their restaurant they wanted to change. "We wanted to get new energy and new inspiration. Moreover the building which housed the old De Librije was old and required major changes. So instead we opted to change the restaurant and move it to De Librije's hotel which is an old prison from the 1700s," said Therese Boer, who leads the front of house and is a trained viticulturist and wine specialist. The Dutch chef is known for putting the Netherlands on the culinary landscape with his love of ingredients and his consciousness for food waste. Jonnie Boer: An obsession for the finest local ingredients creates the ‘De Librije spirit’

To say Jonnie Boer, chef of De Librije, the three Michelin star restaurant in Zwolle takes his produce seriously would be an understatement. When he took the stage at Chef's Revolution in Zwolle he wanted to place the limelight on his suppliers. "It is always the chefs that are in the limelight but in reality what the dish is about are the producers and their products. "So I want to pay tribute to the men and women who have been supplying our restaurant with quality ingredients over the past years." Jonnie knows his produce incredibly well and also knows how to showcase it to reach its best potential. He was championing local seasonal ingredients 20 years ago before it became fashionable to do so to the extent that he recalls how he was ridiculed for trying to serve Dutch lamb as if there was something wrong with it.
