Sergio Herman has used his Instagram feed to name his latest project Air Republic. The restaurant, that was announced in December 2015 is set to open in autumn of this year.
Writing on his Instagram feed with a photo of him looking at the new restaurant that has been purposely built he said “Air republic in coming between Belgium and Holland. You feel it… the air and the vibe is always different! Every single day.
Herman is one of the most talented chefs who decided to stop cooking full time in 2013. He has, however, not rested on his laurels created the successful The Jane with Nick Bril in Antwerp and Pure C in Cadzand with Syrco Bakker.
After the success of The Jane in Antwerp and Pure C in Cadzand, Sergio Herman is opening a new harbour restaurant, pavillion and takeaway in Cadzand. The restaurant is set to open in a few weeks time.
The seaside resort in the Netherlands has been made popular by his restaurant Pure C. It will now welcome the new harbour restaurant, pavillion and takeaway.
Sergio Herman is the former 3 Michelin star chef of Oud Sluis. He decided to close his world famous restaurant in 2013 to seek more balance in his life and to pursue other projects.
Since closing his restaurant in Sluis, just a few kilometres away from Cadzand he has focused on his two restaurants The Jane in Antwerp and Pure C in Cadzand but had told Food and Wine Gazette last year he still wanted to create something different to the two restaurants.
In June this year, Herman also introduced a new concept in the Netherlands, creating Frites Atelier with the aim of creating the world’s ‘best fries’. The aim of the chain which opened its first restaurant in The Hague is to turn the humble potato and the common fast food into something good. Herman researched potatoes to find the best varieties that he could use for the chain and the sauces to accompany the fries change according to the season.
Last year, the Jane was awarded a second Michelin star, an impressive achievement given the fact that it is less than two years since its opening. Housed in a former church, the restaurant, apart from its excellent food created by Nick Bril and his team is considered to be one of the most stunning interior designs for a restaurant.
