ANTWERP: Le Pristine restaurant and Le Pristine Café, Sergio Herman’s newest restaurants will open their doors in the fashion district of Antwerp on Tuesday 14 July.
Reservations to this new hotspot will open from Tuesday 23 June on the restaurant’s website.
Over the last few months, Le Pristine’s core team has used the time of the pandemic to carefully prepare for the opening of Sergio Herman’s latest restaurant.
The restaurant will offer a taste of the Zeeland terroir, from where Herman hails together with Italian flair. The concept promises to be very different from everything he has done before. Le Pristine is contemporary and classy, but above all has an impressive interior that exudes an exceptional international quality.
The Dutch chef rose to fame with Oud Sluis which he closed a few years ago. He has become an entrepreneur after the closure of the three Michelin star restaurant, at the time considered one of the top restaurants in the World.
“Eating at Le Pristine should be a celebration. As a chef, I want nothing more than to make people fall in love with pure flavours, surprising combinations and the ingredients of my roots. Together with interior designers Signe Bindslev Henriksen and Peter Bundgaard Rützou of Danish design studio Space Copenhagen, we rejoice in that festive feeling throughout the project. Every detail was deliberately chosen, from the Belgian linen and bluestone to the Dutch design created by designer friends. I immersed myself so deeply into every aspect of Le Pristine that I now feel a personal connection with every part,” Sergio Herman said.
At Le Pristine Café, at the front of the property, guests will be able to enjoy a quick lunch and dishes from the wood- fired oven during the day, accompanied by some elegant cocktails and wines by the glass. Aperitifs, bar food and antipasti are served from 4 pm. The café concept’s accessible character sets it apart from the restaurant: no reservations are required. It is the perfect stop on a shopping tour or for a little break.
The kitchen of the fine casual Le Pristine restaurant will offer a unique mix of tradition and innovation, with an extensive and perfectly matched, well-balanced wine list. Sergio’s Zeeland origins are reflected in the fish and shellfish on the menu.
The restaurant has a covered patio and a spacious outdoor terrace, both peaceful havens away from the hustle and bustle of the city. Reservations can be made for both the restaurant and the patio. A few tables will also be kept available each day for last-minute reservations.
The dishes of both concepts are Sergio Herman’s tribute to the class and flair of lavish Italian cuisine created with local ingredients.
Sergio Herman brings with him talents that have worked with him in some of his restaurants such as Head chefs Chris Blom (formerly at Our Sluis, The Jane and Air Republic) and Thomas D’Hooghe (Clandestino, Hemelrijk, Pure C). The restaurant management is Willem Van den Broeck who has worked at Noma in Copenhagen, Tokyo, Sydney and Tulum and was 2010 Best Sommelier of Belgium. The maître is Carl Verrelst (Luzine, Oud Sluis, The Jane, AIRrepublic) and Assistant Maître Willem Broos (The Jane, dEssensi).
